Baked Oatmeal

A family I know recently had a new baby and baby made six.  They needed quick and easy meals that would last them a few days.  The first thing I thought of for them was baked oatmeal.  Its quick, its easy and everyone likes it.  Add your favorite fruit (or nuts) and you have a family friendly meal made to stretch.  I like mine with blueberries. Mmm.  Read, bake and enjoy

Baked Oatmeal

Serves:8

Ingredients

  • 2 cups Whole Oats uncooked
  • 1 tsp baking powder
  • 1 tsp cinnamon (or nutmeg or other spice of choice)
  • 1/2 cup sugar more or less to taste
  • 1/4 cup canola oil (or butter)
  • 1 cup milk
  • 2 eggs lightly beaten
  • 2 teaspoons vanilla
  • 1 cup fruits or nuts of choice opt. (blueberries are my favorite)

Directions

  1. Heat oven to 350 F. Spray 8-inch square glass baking dish with cooking spray.
  2. In large bowl, combine oats, baking powder and spices.
  3. In medium bowl, combine butter and sugar; mix well.  To that add milk, eggs and vanilla; mix well.
  4. Add to oats; mix well. Add fruits or nuts of choice and mix
  5. Pour into baking dish.   Bake 45 mins to 1 hour or until golden brown. Remove from oven to cooling rack.
  6. Optional, sprinkle sugar on top after 30 mins and continue baking
  7. Serve with milk, maple syrup or homemade fruit syrup, even ice cream

 Although summer technically ends in mid September, the start of a new school year always seems like the official end of summer.   For me, the end of summer means shutting down the grill with all of its spontaneity  and going back into the kitchen to prepare and cook my family’s meals.  Being the dedicated to wholefoods eating, yet super busy mom that I am, this requires  planning.  Lots of planning, since McDonalds is NEVER an option around here.  Meal Planning is a skill in and of itself.  Its more than a notion and it does take some time but once it is done the rewards are great.  The Key to successful  meal planning is having the right tools and then, of course, executing the plan.

The title of this article, The Power of Lemons, is really an understatement.  When I decided to write this article I had no idea just how powerful lemons really were.  As I did my research I realized that one article would be way too long to summarize all of the information I was gathering.  Since the power of lemons spans across all of my content and then some, I really wanted to present my readers with all of the information I could.  So,  I have decided to break this article up into four sections with this article being the introduction.   Below you will find a link in every category on Home Aide Good about lemons.  Cooking with lemons, cleaning with lemons, using lemons as medicine and a post on lemons under my newly created category, Homemade Cosmetics, which was inspired by you know what… yup, Lemons!

I know it’s a little late in the season for this but, I just wanted to share how much fun I have been having re-creating delicious iced teas and lemonades this summer.  One of the things I love about summer is the re-opening of my local farm stand where I can go to discover new and exciting foods.  Last year I discovered Apple Mint leaves.

I absolutely love all of the vinegar cleaning solutions that I find on the web.  I love that green cleaning is becoming more popular and that more of us are seeking non-toxic, earth friendly, frugal solutions to everyday life challenges.  Even Heinz has jumped in on the wave.  They have now added a “cleaning strength” white vinegar to their line of products.  Don’t fall for this non-sense by the way.  I don’t use Heinz Cleaning Vinegar, I use Shoprite brand.  Its cheaper and it works just fine.
